Sauteed spinach with chickpeas

Looking for a new side dish to try?  Give peas a chance.  This delicious and healthy side dish takes about 10 minutes to make.  Whip it up tonight and pair it with some grilled or baked fish for a yummy and filling meal!

Serves: 4

Ingredients:

2 T. extra virgin olive oil

2 cloves of garlic minced

16 oz. fresh spinach, rinsed

1 15 oz. can of chickpeas, drained and rinsed

2 T. breadcrumbs

1 t. cumin

1 t. paprika

1/2 t. salt

1/2 t. pepper

2 t. red wine vinegar

Directions:

1.  In a large saute pan heat the olive oil over medium heat.  Add the spinach and garlic and cook the spinach down for about 3-4 minutes.

2.  Meanwhile, mix the chickpeas, breadcrumbs and spices in a bowl.

3.  Once the spinach is wilted down, add the chickpea mixture.  Combine everything and cook for about 5 minutes or until beans are heated through.  Remove from heat and mix in vinegar.  Serve warm.
